I have to admit that I’m not a huge fan of pancakes. I wouldn’t even eat them until I was an adult that forced myself to not be picky. Waffles are alright, but crepes? Crepes are where it’s at!
I always thought they would be tricky to make, but I actually find them easier than pancakes – just takes slightly more patience. So after our apple picking earlier this month I decided that caramel apple pie crepes would be the perfect thing to make with our freshly picked apples. I was right ;)
Since there are just 2 of us I made the recipe fairly small. This makes four 6″ crepes so we could have 2 each. The recipe easily doubles though if you want to make more!
So here’s my recipe for Caramel apple pie crepes:
Caramel apple filling
- 2 tablespoons butter
- 2 apples, peeled, cored, and chopped
- 1/4 cup brown sugar
- 1/4 cup white sugar
- 1 tsp cinnamon
- dash of nutmeg
- 1/4 cup milk
- 1/4 cup water
- 1 egg
- 1 tablespoon butter, melted
- 1/8 tsp salt
- 1/2 cup flour
Get the filling started by mixing the chopped apples and all dry ingredients together in a bowl.
In a small frying pan melt the butter over medium heat and add the apple mixture, stirring occasionally.
Let it gently simmer while you make the crepes, just remember to stir it once in a while so that it doesn’t burn.
In a mixing bowl combine the first 4 crepe ingredients.
Whisk in the flour and salt until batter is smooth.
Heat a medium sized frying pan on the stove over medium heat.
Lightly coat the pan with oil or non-stick spray.
Pour a 1/4 cup of batter into the center of the pan and immediately tilt the pan in a circular motion so that the batter spreads out thinly and evenly.
Cook for 2 minutes, or until bottom is light brown and then flip over and cook the other side for the same amount of time.
Warning: the first one usually doesn’t even turn out for me for some reason. It’s always a wonky shape and cooks weird, so don’t be discouraged if that happens to you too. The rest should be prettier ;)
Get out some foil and lay the cooked crepe on it while you make the rest. Put foil between each one as you make them to keep them warm until you serve them.
Cook the remainder the same way making sure to spray pan inbetween.
Lay a crepe out on your plate and add some apple filling down the center. Roll it up and drizzle some of that gooey sauce over top. Sprinkle with cinnamon a sugar if that’s your thing.
