It’s time! My last Christmas recipe, last eggnog themed recipe, and last recipe-recipe of the year!
Although I will admit that calling this one eggnog flavored is a bit of a stretch. The flavour is definitely not super strong, but it does have a different sweetness then regular sugar cookies which I liked. Same goes for the icing.
- 1/2 cup margarine
- 1 cup granulated sugar
- 1 egg
- 2 teaspoons vanilla extract
- 1/4 cup + 1 tablespoon eggnog
- 1 tsp baking powder
- 3 cups flour
- 1 cup icing sugar (powdered sugar)
- 1-2 tablespoons eggnog
- 1 teaspoon vanilla
In a medium mixing bowl cream margarine and sugar together.
Add in egg and mix. Then add the vanilla and eggnog and mix that together.
In a separate bowl combine the baking powder and flour, then add to dough mixture and stir until dough forms.
With your hands form the dough into a ball. Wrap it plastic wrap and let it chill in the fridge for about 10 minutes.
While that’s chilling preheat your oven 350°F and get your work surface ready by sprinkling some flour on it. Get out your cookie cutters, rolling pin, and cookie sheets.
Get out your dough and roll it out evenly about 1/4 inch thick. While you’re rolling make sure the dough doesn’t stick to the counter or rolling pin by dusting both with flour as needed.
Cut out your cookies and place on cookie sheet. Bake for approximately 9-12 minutes, until the bottoms are lightly browned but not the edges. Transfer to a cooling rack to cool.
While their cooling you can make your icing. Stir all 3 ingredients together in a bowl and adjust the consistency if needed – more sugar if you need it thicker, more eggnog if you want it thinner.
The icing will dry slightly shiny and hard enough to stack the cookies afterwards.
