You know when you’ve been meaning to go get groceries all week, but never made it there so all you have is canned soup in your cupboards and condiments in your fridge? ….just me?
Well, this morning was one of those times and I needed breakfast stat so I turned to this trusty banana bread recipe from a Company’s Coming cookbook. It’s a never-fail one for me so I thought I’d share it this weekend!
Banana Bread (original recipe from Company’s Coming)
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter or margarine, softened but not melted
1 cup sugar
3 overripe mashed bananas
1 tablespoon lemon juice
1 teaspoon vanilla extract
Combine first 3 ingredients in a large bowl. Make a well in the centre and set aside.
Cream butter and sugar together in another bowl. Add eggs one at a time, beating well after each.
Stir in remaining 3 ingredients then pour it into the flour mixture. Stir together until just moistened. It’s okay if it’s a bit lumpy because you don’t want to over stir.
Grease a loaf pan and pour in the batter.
Bake at 350°F for 55 minutes. Check if it’s done by inserting a wooden toothpick in to the middle. If it comes out clean it’s ready!
Let it rest in the pan for ta least 10 minutes then remove from pan and let cool completely on a cooling rack. Slice it up and enjoy!
