A while ago, during one of my “I love our homemade lattes!” posts, I promised that I would share some coffee syrup recipes and now I’m finally doing it.

Turns out syrups are so easy to make. Basically you can go to the store and spend $10-20 on it or you can boil some water and sugar together and have it be just as good….

Although I have to admit that I searched, tested, and tried a bunch of different ways to make Starbucks’ Cinnamon Dolce syrup and sadly never found success. All the recipes that claim their’s ‘taste just like it’ are liars. Liars! And then, after more digging, I found out why. There isn’t any real cinnamon listed in the ingredients. Actually nothing in it is ‘real’… which is probably why it’s so delicious ;) So now I just go with this recipe which has been the best, and it will make your house smell like Christmas while you make it. Yum.

Okay, so to make a latte you need to warm up some milk (slowly so you don’t scald it).
If you have a milk frother (IKEA has them for $4) then froth it up to get foam.
Make a shot of espresso. If you don’t have an espresso machine Tassimo and Keurig have espresso pods. Or you can get a moka pot for about $10.
Get your mug out, pour in the espresso, add 2-3 spoons of syrup, pour in the milk and top with foam. Drink up!
You can also add some cinnamon & sugar, whip cream, or caramel on top if you want to get even fancier.

and here are the syrup recipes:

Cinnamon syrup (adapted from Sober Julie’s Starbucks Copycat Cinnamon Dolce Latte)
1/4 cup brown sugar
1/4 cup white sugar
2 cinnamon sticks
3/4 cup of water
1/2 tsp of vanilla extract

Bring water to a boil, reduce heat to medium, and add cinnamon sticks.
Boil for 15 minutes, stirring once in a while.
Take the cinnamon sticks out, add sugars, and stir until dissolved.
Simmer for 10 minutes.
Remove from heat and stir in vanilla. Let it cool and pour into glass jar or bottle.

Vanilla syrup
1/2 cup water
1/2 cup white sugar
1 tsp vanilla extract

Bring water to a boil, reduce heat to medium and add sugar.
Stir until dissolved and simmer for about 10 minutes.
Remove from heat and stir in vanilla. Let it cool and pour into glass jar or bottle.

I store mine in the fridge and have never had it crystallize or go bad. I make it in small batches so I don’t really have to worry about that anyway.

You can make other flavours just by changing the extract. Peppermint, maple, almond.. anything really. Other people suggest adding 1/4 cup caramel sauce when you add the sugar to make a caramel one. Find a flavour you like and give it a try!
